Seems crazy but we’re already planning SUMMER over here – camps and trips and allll the fun summer things! We should celebrate spring first, no? With both right around the corner, I’m looking forward to all things that signal a change in the weather and a fresh start. Enter:
When Nestlé® Toll House® asked if I wanted to create a recipe using their Ultimates Chocolate Chip Lovers Cookie Dough 16 oz. Bar, I said, duh! These cookies are incredible and the absolute easiest to make – they come packaged and even already cut, all you have to do is separate them and drop them on the baking sheet and less than 15 minutes later, you have the BEST chocolate chip cookies. Pro tip – sometimes the cookies come out looking a little “square” but if you use your fingers to round them out a little on the edges, no one would ever know they’re not made-from-scratch.

We decided to whip up some amazing DIY ice cream sandwich cookies and they are a MUST for any spring celebration you have coming up. Seriously so easy and SO impressive.
Gather your materials – we used the Ultimates Chocolate Chip Lovers Cookie Dough 16 oz. Bar, gold and silver sprinkles, and plain vanilla ice cream. Doesn’t get much simpler!
Like I mentioned before, you’re going to get a much prettier cookie if you round the edges a little bit with your fingers like the one on the right below.
While your cookies are baking, scoop your ice cream into a plastic, disposable cup and mash it all down. Put it back in the freezer to harden up a bit.
When it’s nice and frozen and your cookies are 100% cooled, grab a serrated knife and cut the plastic cup while it’s on its side, basically creating disks of ice cream.
And put your ice cream on your cookies 🙂
So pretty on their own, right?!
then, roll the ice cream edges in whatever sprinkles you choose for a fun, festive touch. pop them back into the freezer and keep them there until you’re ready to serve.
